A Santoku knife is a Japanese style chef’s knife. Santoku is a word originated in Japan. It literally translate as “Three Virtues”, with referring to it’s great ability in chopping, mincing and dicing.

So what are the features of a Santoku Knife?

  • Santoku knives are usually in between 5 to 8 inches long, with their blades curved at the front and flat on the opposite side, which act like a sheep’s foot tip.
  • Santoku knives do not “rock”, they are designed for use to cut in an up and down motion, not rocking backwards and forwards.
  • Santoku knives are lighter and thinner than a normal chef’s knife, which is more ideal for slicing and to get a good feel of the blade when cutting through soft or sticky food such as tomatoes or dough.
  • Another unique feature of a Santoku knife is their “scalloped” pattern on the blade (granton edge). It is like creating air pockets for easy release of food, so food will not stick the knife while slicing.
